Please submit 3 sets of revised drawings to a Development Services Permit Coordinator, if required, or a written response to the review comments to the Development Services Permit Coordinator and the Pretreatment Reviewer. RESPONSE (from Salus Architecture – dated June 13, 2018): The entire Kitchen has been deleted from this project and the food will be catered in. The sinks, dish washers and garbage disposal have all been eliminated from the project. The plans show two interior hydromechanical grease interceptors (HGI) instead of an outside gravity grease interceptor (GGI). In an earlier meeting with the city it was mentioned that this building would utilize a GGI to capture fats, oils, and grease (FOG). The plans indicate a garbage disposer to be used in the prewash sink directly before the dishwasher. Edmonds Pretreatment Ordinances prohibit the shredding and subsequent discharge of food wastes into the sewer collection system and the Wastewater Treatment Plant. The prewash sink, where dishware and pots and pans are rinsed of FOG before being placed in the dish washer, is required to be directed to the HGI. This is not possible with a garbage disposal since it will over load the HGI with food waste. The use of an outside GGI provides greater retention time and storage of captured FOG and food sediment and can manage the loading of a garbage disposal where the HGI cannot. The entire kitchen waste can be directed into the GGI providing greater protection for the building side sewer and the collection system. The fixtures to drain through the HGI are the three compartment sink, prewash sink, and the meat prep sink. The use of an outside GGI is strongly encouraged, but if the installation of an outside GGI is improbable, then the removal of the garbage disposal is required. Please let me know which direction is chosen regarding grease collection equipment. The kitchen plans will have to be modified to reflect any changes. Please submit kitchen plans that clearly show drain directions separating the sanitary drain from the grease drain. Color code drain lines if necessary.
