Subject: PCC remarks/conditions for GI sizing
This sizing is not based on the same criteria used for a food service/restaurant. As per
our communications in December of 2007, a grease interceptor between 1800-2000 gal is
approved. This will be predicated that the upstream grease traps inside the facility are
properly maintained. Note: use of disposals connected to the inside grease traps will
greatly decrease the required cleaning frequency intervals for the inside grease traps.
This sizing approval is also conditional that all tenant spaces will be non-food services.
Any additional food services in tenant spaces will require the installation of an additional
outside grease interceptor.
