Fully drawn and expanded plumbing plans are required for the approval of this permit. These color coded plans must show the separation of fixtures connected to the grease trap (GT) with a dedicated waste line and waste lines not connected to the GT going into the sanitary drain. Rensch Response: The drawings have been adapted to show color. 2. 1 do not see a prewash sink before the dishwasher. How are kitchen staff to prewash or spray down pots, pans and dishware before they are placed in the dishwasher? Rensch Response: Response by others. 3. 1 see a vegetable prep sink but is there a meat prep sink in this kitchen? Rensch Response: Response by others. 4. These fixtures must be connected to the GT: • Prewash station • Meat prep sink • Three compartment sink. Follow the Health Departments requirements for isolating the sanitize compartment. Floor drain in the wok area (locate the floor drain as close as practical to wok) Rensch Response: Prewash station does not exist (Architect is to confirm). The 3 compartment sink, the floor sink in the wok area, and floor sink under the meat prep sink are connected to grease waste, shown in red. Per our phone conversation on March 10, 2016, the floor sink is to take the discharge of the wok sink and this scenario will be acceptable. 5. Do not connect to the GT: • Mop sink • Vegetable prep sink • Hand sink • Dishwasher Rensch Response: Mop sink, vegetable prep sink, hand sinks, and dishwasher all have been shown connecting to sanitary sewer, shown as a solid black line. 6. The minimum size GT permitted by the City of Edmonds is 35 gallons. 7. The size of the GT needs to be increased. The submitted sizing worksheet does not include the wok drainage and the floor drain serving the wok work area.
