As for menu options we are moving forward with a few sandwich options
cooked on Waring Pro Panini Press and or Convection Oven (already
identified in original proposal). All vegetables will be stored in
separate containers in designated upper shelf of NSF refrigeration at 41F or
below. Meat is taken from the containers by staff wearing food service gloves.
All vegetables stored in walk in cooler at 41F or below on upper and top racks
designated for vegetables only. Food Prep (Vegetable) Sink is cleaned and
sanitized – all vegetables are prewashed and commercially packaged. Additional
vegetables will be rinsed in food prep sink by staff wearing gloves. Vegetables will
be stored in labeled plastic containers. Per order vegetables will be dispensed by
gloved staff with tongs.
Separate Commercial Vegetable prep sink will be used to wash all
vegetables. Separate cleaned and sanitized cutting board and utensils provided
for all vegetables.
All ingredients will be commercially packaged and purchased. All
Vegetables will be purchased as prewashed and stored appropriately.
Ingredients from the sandwich are added from the sandwich prep table kept at
40F or below and assembled by staff wearing food service gloves.
Pre Sliced and commercially packaged deli meat for sandwiches is delivered
weekly.

Sandwiches will be served on a plate with a side of commercially produced
"Kettle" Chips and a Pickle by staff wearing gloves.
Soup and Chili:
Soup will be commercially produced, Frozen Soup and Chili from the can.
Frozen soup will be kept in a freezer in the kitchen. Soup/Chili will be
disposed of daily and will not be reheated. Soup/Chili will be heated and
stored in previously approved warming and serving kettles.
Soup will be maintained in a kettle and served at temperature of 140F or higher
and checked with a thermometer.
Salads – Greens will be delivered 3 times a week:
1.Mixed Green Salad.
Commercially packaged prewashed Mixed Greens will be stored on
separate rack of walk in cooler, to shelf, in separate plastic container:
Maintained at a temperature of 41F or Below. – served per order, lettuce is
dispensed with tongs to plate, by staff wearing food service gloves – served
with packaged dressing.
