The plans provided do not indicate any outdoor Gravity Grease Interceptor’s (GGI) serving the two buildings. A GGI or GGI’s will be required for both phases of construction to capture fats, oils, and grease (FOG) that will be created from food service establishments (FSE) that will occupy spaces in the two buildings. GGI’s should be placed as close to possible to the kitchens they serve. From where the side sewer pipe exit the buildings in phase one and phase two and from the number of possible FSE’s, two GGI’s may be required to keep GGI’s close to source of FOG. Size GGI’s to accommodate the maximum number of possible FSE that may occupy spaces in each building. The minimum size GGI for a FSE is 500 gallons. Provide detailed cut sheets showing the proposed GGI/GGI’s for this location. AGGI should have: 6” PVC lines entering and exiting the GGI Proper venting allowing free air exchange between both chambers Brackets supporting all downlegs in GI. It is very important to secure the downlegs to the vault walls; it may prevent costly repairs in the future. It is recommended to use stainless steel unistrut bar and 6” clamps to secure pipe Specific for traffic Graded away from the manholes to prevent runoff from entering the GI Man hole covers above each downleg for inspection and maintenance The following fixtures must be connected to the GGI: Mop sink 3 comp sink Dishwasher and prewash Prep sink, if used for meat Floor drains in the scullery/food prep area The following fixtures must not be connected to the GGI (unless approved by pretreatment): Hand sink Vegetable prep sink Please have the GGI installer notify me for inspection soon after the GGI has been installed but before complete backfill. The grease drain will need to be inspected running to the GGI. A water test will need to be conducted, before complete backfill, to verify the integrity of the tank. The tank is filled with fresh water, no leaks should be visible through the baffle wall or outside the GGI. Please call me Monday-Friday for questions and assistance.
