The subject application has been reviewed but cannot be completed until the
following items have been addressed/completed. Please submit 3 sets of revised
drawings to a Development Services Permit Coordinator, if required, or a written
response to the review comments to the Development Services Permit Coordinator
and the Pretreatment Reviewer.
Hello Ralph,
I have combined my comments for all three permits (BLD20080951-953) since they are
in the same building and you are listed as the applicant for all three permits.
Thank you for the replies for my Plan Review Comments dated 12-1-08. The plans look
good and I have just a few small comments.
1.The Maharaja – I noticed there are (2) wok cookers in the kitchen. I assume these
cookers will have a water source and drains. If there are drains for these wok
cookers, please ensure that the drains are connected to the grease interceptor (GI).
The wok cookers are high generators of grease.
2.The Maharaja and the Old Town Steakhouse – Please ensure that the hand wash
and bar and lounge dump sinks are not connected to the GI. Also, floor drains
that are not in the prep and wash areas of the kitchen should not be connected to
the GI. Examples of the areas I am referring to are storage areas, including
freezers and coolers, as well as office areas. The above areas should be routed to
the side sewer. This will eliminate unnecessary flow to the GI.
3.The Banquet Room – No further comments, it will be signed off for Pretreatment.
Ralph, please do not hesitate to call me for questions or concerns. It has been a pleasure
working with you. It was nice to see the owners, you, and the City work together for an
innovative approach to install the GI. I believe there is value in the GI for all of us. We
are almost done with this project!
