The subject application has been reviewed but cannot be completed until the
following items have been addressed/completed. Please submit 3 sets of revised
drawings to a Development Services Permit Coordinator, if required, or a written
response to the review comments to the Development Services Permit Coordinator
and the Pretreatment Reviewer.
1. I would strongly recommend that you locate the outside grease interceptor (GI), number 8 on your site
plan, much closer to the kitchen. Otherwise, the line running from the kitchen fixtures to the GI has
the potential to need much preventative maintenance to prevent plugging with grease. Alternative sites
for the GI include the existing parking or the drive-through lane. Try to locate the GI as close to the
kitchen fixtures as possible and ensure it is properly rated for traffic etc.
2. The GI must be approved by Pretreatment. Please see the City of Edmonds Grease Trap and Grease
Interceptor Permit Submittal Requirements forms.
3. The following fixtures must be connected to the GI:
a. Mop sink
b. 3-comp sink
c. dishwasher
d. Prep sink, if used for meat
e. Floor drains in the scullery/food prep area
4. The current plans do not show enough detail to determine if a grinder or disposal will be used.
Pretreatment strongly discourages the use of a grinder/disposal in all kitchens. Please clarify if the use
of a disposal/grinder is planned in the kitchen area and the GI will be required to be sized up to
accommodate it.
5. There is already a GI in-service at the current Barlee’s site. If this existing GI is abandoned and
replaced as per the plans, follow proper protocol to abandon it.
6. 3-comp sink – follow County Health Department standards for isolating the sanitize sink from the GI
by either including a funnel/air gap if using the same line as the wash/rinse sink to the GI or preferably
using a dedicated plumbing line to a floor sink that connects to the gray water line.
Please call me Monday-Thursday for questions and assistance.
