The subject application has been reviewed but cannot be completed until the following
items have been addressed/completed. Please submit 3 sets of revised drawings to a
Development Services Permit Coordinator, if required, or a written response to the review
comments to the Development Services Permit Coordinator and the Pretreatment
Reviewer.
1. Using the existing grease interceptor is acceptable. However, I will need to
inspect the vessel when it is pumped out and empty to ensure it is in good
condition prior to signing it off. Please notify me when the grease interceptor
will be pumped. My records indicate that the existing grease interceptor at
Barlee’s is 2600 gal. Please note that on the lower left of the plans, the existing
grease interceptor is noted at 1000 gallons instead of 2600 gallons.
2. A freeze proof hose-bib will be required on the outside wall adjacent to the
grease interceptor to aid in the grease interceptor cleaning by the recycler.
3. On page P-2.3 of the Sanitary Plumbing plans, the following is permissible to be
connected to the outside grease interceptor:
a. 27A - Dishwasher
b. 12A – 3-comp sink
c. 11A – Mop sink
d. All floor drains in the kitchen area
e. 64 – Soup station
f. 48F and 86K rack and deck ovens
The following should not be connected to the grease interceptor:
a. 21A – Hand sinks
b. 54 – Soda/ice dispenser
c. 22 - Ice Caddy
d. 24C – Ice bin
I am not sure what the following fixtures are used for: Note: all fixtures that are
not
grease producing should not be connected to the outside grease interceptor.
a. 18 and18B – drop-in sinks
b. 68 – Soup rethermalizer
c. 2-comp sink – Is this sink used for vegetable, meat, or bread prep etc.?
d. What are 44G and 44H (proofers)?
e. I have never heard of a drain line from an oven before. Is this for clean-
up/washing?
4. Please let me know if the fixtures above that should not be connected to the
grease interceptor are difficult or not feasible to be connected to a gray water
line. Perhaps allowances can be made to connect them to the grease interceptor
due to their low DFUs.
