The subject application has been reviewed but cannot be completed until the following
items have been addressed/completed. Please reply by email to the Pretreatment Reviewer
as this documents and tracks the permit process.
1. I am pleased to see that you have made preparations for a 2000 gallon grease interceptor
(GI) and within close proximity to the kitchen.
2. For Pretreatment to sign off, a detailed cut sheet showing the proposed GI for this location
will be required as well as a plumbing/mechanical drawing showing the appropriate
fixtures connected to the GI. This does not have to be an elaborate drawing, just a simple
kitchen plan that is color coded separating the grease drain from the sanitary drain.
3. Could you please give a brief explanation and the intended use of the “training
kitchen/laundry” area and its loading to the sanitary drain and the grease drain?
4. The GI should have:
6” PVC lines, baffle tees, and drop legs.
Proper venting allowing free air exchange between both chambers.
Brackets supporting all downlegs in GI. It is very important to secure the
down legs to the vault walls; it may prevent costly repairs in the future. It is
recommended to use stainless steel unistrut bar and 6” clamps to secure pipe
Manhole lids specific for traffic.
Graded away from the manholes to prevent runoff from entering the GI.
Man hole covers above each downleg for inspection and maintenance.
5. The following fixtures must be connected to the GI:
Mop sink.
3 comp sink.
Dishwasher and prewash.
Meat prep sink.
Floor drains in the scullery/food prep area.
6. The following must not be connected to the GI:
Hand sink.
Vegetable prep sink.
7. For the 3-comp sink – follow The Health Department standards for isolating the sanitize
sink from the GI.
8. Please have the GI installer notify me prior to the setting of the GI. I prefer to be present
during the setting of the vessel to eliminate potential problems. Additionally, a water test
will need to be conducted, before any backfill, to verify the integrity of the tank. The tank
is filled with fresh water one compartment at a time; no leaks should be visible through the
baffle wall or outside the GI.
9. An exterior hose bib should be installed as near as possible to the GI location to facilitate
the pumping, cleaning, and priming of the GI.
