The subject application has been reviewed but cannot be completed until the following
items have been addressed/completed. Please submit 3 sets of revised drawings to a
Development Services Permit Coordinator and/or address the issues noted.
1.The plans do not detail the sink fixtures and grease traps in the drawings. Please specify
whether the current, in-place grease traps will be used in the remodel.
2.Please show the proposed fixture application and grease trap detail in the plans.
3.All grease traps must be sized properly for the fixture applications in the remodel. A
grease trap sizing sheet will be required if new sink fixtures are used in the remodel.
4.All grease producing sinks such as pot and pan washing and prewash sinks are required
to be connected to the grease traps. Note: sanitize sinks, food prep sinks, and hand wash
sinks are exempt. Dishwashers are not permitted to be connected to grease traps.
5.Fit a better grease trap cover for the bakery grease trap than the current fabricated cover if
the grease trap will continue to be used after the remodel. The original cover had to be
broken off to access the grease trap.
6.Comment: I would strongly suggest that QFC consider an outside grease interceptor for
this remodel. That application would help to eliminate odors, slip hazards, disruptions
from cleaning and servicing, and greatly reduce maintenance issues that are related to
inside grease traps. It would be a major value-added item to your remodeled facility.
Your customers and staff would not be subjected to the odors during cleaning,
inspections, possible trip and slip hazards, and plumbing problems such as the one you
have had in the past that were related to inside grease traps.
