The subject application has been reviewed but cannot be completed until the following items have been addressed or completed.
Plans indicate a prep sink (P4). Is this a meat prep sink or a vegetable prep sink?
Plans do not indicate the prewash sink before the dishwasher. The prewash sink must discharge to the GT.
Is the dishwasher to be used in this location high temperature or low temperature?
High temperature dishwasher is not to be discharged into the GT.
These fixtures must be connected to the GT:
Prewash station
Meat prep sink
Three compartment sink. Follow the Health Departments requirements for isolating the sanitize compartment.
The floor drain in the wok area (locate the floor drain as close as practical to wok)
Do not connect to the GT:
Mop sink
Vegetable prep sink
Hand sink
Dishwasher
Plans need to be resubmitted to reflect any changes to the current submittal.
