Please submit 3 sets of revised drawings to a Development Services Permit Coordinator, if required, or a written response to the review comments to the Development Services Permit Coordinator and the Pretreatment Reviewer. Hello Ted, 1.Your 35gpm grease trap (GT) is acceptable. Please remember that it will require routine maintenance to keep it less than 25% full of fats, oils, grease, and sediment per city code. The plans do require some modifications, however. a.The dishwasher should not be connected to the GT as indicated in the plans. b.The hand sink and the display cooler/ice machine should not be connected to the GT. c.The (2) comp sinks should be connected to the GT as indicated in the plans. d.Disposals are not permitted to be connected to the GT. I did not see a disposal in the plans. 2.You will need to complete a Grease Removal Equipment Application and the Grease Trap Sizing worksheet for me to sign before a plumbing permit can be issued (enclosed). I assumed your sinks measured 18” X 18” X 12” (each individual sink in the comp sinks) for the 35 gpm GT approval. If the sinks are noticeably larger, a larger GT may be required. No sink dimensions were included in the plans. Also, the GT must be installed where there is suitable access for inspection, cleaning and for the baffle to be removed. 3.A flow control valve for the GT is required, not optional as indicated in the plans. A flow control valve is typically included with the GT unit. Venting is required to be installed for the GT as per the manufacturer. Under most conditions, a vent is connected to the flow control valve and also to the outlet line of the GT, especially if it is tight lined to the side sewer line. 4.The sanitize sink should be isolated from the line to the GT by either an air gap or a connection to a dedicated line to the side sewer. I noticed all three sinks were connected directly to the GT in the GT waste detail for the plans. Please contact the County Health Department for specific requirements.
