Michael, I reviewed your plans, and yes per our discussion, I see you did include a GT in the plans for The Winged Pig. Since your Food Service, The Winged Pig, does not prepare any food on site, (only reheat it) your food service is exempt from the grease trap requirement. However, since a grease trap is in your submitted plans, I would encourage you to install it. This would give you flexibility to prepare food at your food service at a later date without the need to get another plumbing permit and add a grease trap. The choice is yours. Since you are not required to install a grease trap, Pretreatment will not regulate your food service in terms of maintenance if you install your proposed grease trap.
