Looking at the plans I do not see a proposed outdoor gravity grease interceptor (GGI) for this facility. 2. For newly constructed, expanded, or renovated retail facilities that may occupy a food service establishment (FSE), city ordinances require the installation of a GGI. 3. At this phase of construction it may be difficult to size a GGI when there are no FSE's in mind. The minimum size GGI for any one FSE is 500 gallons. Keeping this in mind, if there are 3 spaces in the facility, the minimum size GGI to be installed would be 1,500 gallons. 4. For Pretreatment to sign off, a detailed cut sheet showing the proposed GGI for this location will be required and the GGI will also need to be added to the plans. 5. The GGI should have: • 6" PVC lines • Proper venting allowing free air exchange between both chambers • Brackets supporting all downlegs in GGI. It is very important to secure the downlegs to the vault walls; it may prevent costly repairs in the future. It is recommended to use stainless steel unistrut bar and 6" clamps to secure pipe • Specific for traffic • Graded away from the manholes to prevent runoff from entering the GGI • Man hole covers above each downleg for inspection and maintenance 6. The following fixtures must be connected to the GGI: • Mop sink • 3 comp sink • Dishwasher and prewash • Prep sink, if used for meat • Floor drains in the scullery/food prep area • Wok drain 7. The following fixtures must not be connected to the GGI: • Hand sink • Vegetable prep sink 8. Please have the GGI installer notify me after the GGI has been set and plumbed. Additionally, the GGI needs to be filled with fresh water for the GGI inspection. Please call me Monday -Friday for questions and assistance.
