Grease Interceptor Sizing Calculation
80 meals per peak hour
6 gpm flow (dishwasher) + 1 gpm flow (disposal) = 7 gpm flow
Retention time = 2.5 hours
Storage Factor = 1
80 * 7 * 2.5 * 1 = 1,400 gallons
Therefore, use 1,500 gallon interceptor.
