World's finest F izza Ovens 5. Ventilation This information is provided to assist in safe and functional installation of Forno Bravo commercial ovens. The oven must be installed in accordance with all relevant local and national codes, and in a manner acceptable to the authority having jurisdiction. It is never appropriate to use "B vent" in any part of an exhaust system connected to a Forno Bravo oven. Due to the possibility of sparks entering the duct, exhaust systems serving Solid Fuel equipment SHOULD NOT be combined with exhaust systems serving other (non -solid - fuel) cooking equipment. Submit you venting plans to your local authorities before proceeding with your installation, as there may be additional requirements in your area. There are two venting options for the Modena2G Series ovens. These methods are Direct Connection of a Grease Duct or UL103 Type HT listed chimney (Direct Venting) and a Type 1 Exhaust Hood installed according to NFPA 96 and the UMC with Grease Duct venting. VERY IMPORTANTI SUBMIT YOUR VENTING PLANS TO LOCAL CODE AUTHORITIES BEFORE PROCEEDING WITH INSTALLATION. Most•cities accept the U.L. listed Direct Connection method; however a few cities will require the use of a Type I grease hood over the oven opening and vent. Check with your local building department to determine which method or methods are acceptable. 1. Direct Connection. An 8" (inside diameter) Listed UL103 Type HT or Grease Duct/Building Heating Appliance Chimney may be connected to the integral refractory vent at the top of the Modena2G oven. A field built grease duct, constructed and installed to the specifications of a grease duct as detailed in NFPA 96 or the International Mechanical Code, may also be used. For,GreaseDuct'in§tallation requirements refer to the Selkirk Metalbestos Model PS and IPS Grease Duct Installation -Instructions or Metal -Fab IPIC Installation Instructions. For UL103 Type HT installation requirements, Commercial Oven Installation and Operation Manual refer to the Simpson DuraTech (or equivalent) chimney system installation instructions. 2. Type-1 Exhaust Hood Installed per NFPA 96. (For commercial applications only) If required, a Type 1 hood can be installed above the oven opening and set on the top of the oven as show in the illustration below. This installation method meets the standard for ventilation control and fire protection for commercial cooking operations. The exhaust hood dimensions must be 48" wide, 38" deep, 24" high. Duct Velocity 1500-2500 FPM - Volume: 800-1000 CFM The grease filters must be positioned at the rear of the exhaust hood and must be of.the steel baffle type (Mesh type grease filters must not be used). The front of the exhaust -hood must set forward 20" from the front of the oven face. The face of the fitter mustbe a minimum.of 42 inches from the oven heath per the Uniform Mechanical Codes. (UMC) or 48" per NFPA 96. The sides of the exhaust hood must extend a minimum of 6" to either side of the oven door opening. There must be a minimum of 3 inches of clearance between the hood and any combustible surface. See illustration below on hood installation. FIRE SUPPRESSION Check with your local code officials to see if fire suppression is required in your area. If fire suppression is required, you must vent the oven using a Type 1 hood, constructed and installed in accordance with NFPA 96. Fomo Bravo offers UL Listed Exhaust hoods for our ovens that are pre -piped for ANSUL R-102 fire suppression. We do not recommend aiming any fire suppression nozzles into the cooking chamber of the oven. All installations are subject to the approval of the local authority having jurisdiction. IMPORTANT SAFETY CONSIDERATIONS Solid -fuel exhaust contains creosote and other substances that accumulate in ducting, creating a risk of fire. The rate © Forno Bravo, LLC 2010. All Rights Served. A. Duct Protection It he not required that the fan be shut down or the exhaust dud be dampered for the system to operate property. Each nozzle is approved to protect exhaust duds of untimtted Duct protection requires that a nozzle by positioned to dis- charge up, Into the dud. The nozzle Is a Model 213. Part No. 551038. The Model 2D dud nozzle Is a two (2) flow nozzle. A single 2D nozzle Is capable of protecting square or rectangular duct with a maximum of 100 In. perimeter, with the longest skta being a maximum of 34 In. It can also protect a round dud with a maximum diameter of 31 7/8 in. Two (2) Model 21) duct nozzles can protect a square or reo- tangular dud with a maximum of 150 in. perimeter with the longest side being a maximum of 51 in. They can also pro. tact a round duct with a maximum diameter of 47112 in. When two (2) 2D duct nozzles are used to protect a single duct, the cross sectional area of the duct must be dtvkIed Into two equal symmetrical areas. The nozzle must then be installed on the centerline of the area it protects and aimed dhMy Into the dud opening, The nozzle(s) must be installed on the oerrtedirne of the duct, with the tip located 0 to 8 in. into the opening, and aimed directly Into the dud opmrbtg. Tilt SkilletBralsing Pan Protection for tilt skillet or braising pans is to be based upon the coverage limitations provided for deep fat fryer protection. Coverage limitations are based on fryer sizes including drip boards. Exception: Tilt skillets and braising pans may exceed the maximum of 6 sq. ft. total when modularizing. Tilt skillets and braising pans generally uti- lize a hinged cover. Fryer protection nozzles are to be placed toward the front of the appliance to minimize the potential for the tilt skillet or braising pan cover to inter- fere with the nozzle discharge. Design requirements for multiple nozzle fryers are broken down as follows: 1. If the fryer includes any dripboard areas, measure both the Internal length (front to back) and width of the frypot portion. Then measure the internal length and width of the overall hazard area including any drlpboard areas. Determine the area of both the frypot and the area of the overall vat by multiplyIN corresponding length and width dimensions. 2.
