Sno HD approval letterSNOHOMISH HEALTH DISTRICT WWW.SNOHD.ORG Environmental Health Division August 7, 2018 Kim Karrick Subject: Proposed remodel, Scratch Distillery, Installation of a Food Preparation Sink 190 Sunset Ave., Edmonds, WA 98020 Dear Ms. Karrick: After reviewing your plans with the Rules and Regulations of the State Board of Health, and with the policies of the Snohomish Health District, your remodel plans for Scratch Distillery have been approved. The approval was based upon the plans and photos submitted on 06/21/2018, 08/02/2018, and 08/07/2018. Any changes to the plans without preapproval from the Health District will void this approval. A final inspection is required prior to approval to use the proposed food preparation sink. At the time of inspection the construction of the food service establishment must be complete and all equipment must be in place and in proper operating condition. Incomplete construction or equipment operation will result in a $185.00 re -inspection fee. Contact the Food Program office a minimum of one week in advance to schedule an appointment for the preoperational inspection. Please review the following requirements and conditions of operation before scheduling: 1. The scope of this project is the installation of a new food preparation sink for washing drink garnishes. 2. An indirect waste drain (1 inch vertical air gap, minimum) is required for the food preparation sinks. 3. Only one food preparation sink is indicated on the floor plan. Because of this only vegetable preparation will be allowed at this sink. 4. All food service equipment, both new and used, must be listed by the National Sanitation Foundation (NSF) or equivalent for its intended use. 5. The ceiling above the food preparation areas must be non -perforated, nonabsorbent, smooth and easily cleanable. 6. All light fixtures in food preparation and storage areas must be provided with covers and shatterproof bulbs. 7. Plumbing must meet state and local codes. Changes or additions to the approved plans or equipment require pre -approval from the Snohomish Health District prior to implementation of the changes. A copy of the Snohomish Health District Appeals procedure is available upon request. An administrative appeal must be initiated with 21 days from the date of this email.
