The Grease Interceptor used for the three -compartment sink must be at least 35
gallons in size.
The 1 Comp Sink adjacent to the Prep Table does not have a grease trap, therefore it
cannot be used for cleaning of items used in food preparation. Should the use of the
sink change and be used to clean items used in food preparation then a grease
interceptor will be required.
