Dear Rian,
Environmental Health Division
It has been determined by the Snohomish Health District Food Safety Team that an annual permit will
not be required for your proposed business, Table for 12. The following are conditions of operation that
will allow this business to operate without annual permitting from Snohomish Health District:
1. Advanced food preparation for cooking classes by staff members and/or educators is not
permitted.
2. Ingredients for cooking classes must be purchased the same day that they will be prepared in
class. Long-term storage of temperature -controlled items is not permitted.
3. Guests who partake in the cooking class experiences must be pre -registered. The business
may not permit members of the public who walk-in without prior registration to dine -in.
4. Cooking class participants should be preparing most of the foods themselves. Assistance may
be provided by staff members and/or educators, but meals may not be fully prepared by
educators.
5. Consumption of the foods prepared in the classroom setting is limited to pre -registered guests
who participate in the experience of preparing the pre-set menu.
6. Meals and beverages may not be sold or served to the public when prepared by staff or other
food handling professionals for media demonstrations.
Future changes to methods of food handling, style of food service, or the Retail Food Code may require
a reconsideration by the Snohomish Health District regarding an annual permit.
