Owner has removed underhood grease-creating appliances and changed to
1) convection oven
2) dual burner for sauce warming, and
3) stockpot burner appliance.
You may keep the Type I specified hood that meets the minimum exhaust requirements for
Type II and eliminate the suppression system for your Type II installation.
