The subject application has been reviewed but cannot be completed until the
following items have been addressed/completed.
1. The submitted plans indicate food stations that will may be changed and/or demolished. It
is important to pay close attention if the stations have drains. The drains could be directed
to a dedicated grease drain headed for the gravity grease interceptor (HGI) outside or the
drain could be directed to the sanitary drain.
2. Any station or fixture that could potentially generate fat, oils, or grease (FOG) or could
have FOG poured down the drain is required to be directed to the HGI.
3. Are there any current food stations that will be demolished or changed that have a drain in
it?
4. If so, the drain has to be confirmed if the drain goes to the HGI or the sanitary drain.
5. If this station has a drain going to the HGI and it is being moved and then reused, the drain
must then be redirected to the HGI.
