The subject application has been reviewed but cannot be completed until the following
items have been addressed/completed.
1. Regarding the bakery HGI, the minimum size permitted by the city is 35 gallons. If the
current HGI that is being replaced is larger than that, please keep with the larger size.
2. When installing the new bakery HGI, drain direction should remain the same as it is now.
3. The plumbing plans do not show drain lines or a grease drain indicating the direction of
fixture drains. It is also unclear which fixtures or kitchen equipment is in the deli along
the east wall.
4.Provide expanded plumbing plans for the deli showing which fixtures go where.
These plans must list what the fixtures are and show the drains connected to the
HGI and fixtures going to the sanitary with a dedicated waste line. Use color
coded lines, if necessary for clarity, separating the HGI from sanitary (these can
be hand drawn).
5. Fixtures to be drained through a HGI;
3 comp sink (excluding the sanitize compartment)
