The subject application has been reviewed but cannot be completed until the
following items have been addressed/completed.
1.The following revised pretreatment plan review is taking into consideration the
allowance of a hydromechanical grease interceptor (HGI). However, this brings to
light new issues.
a.It appears on the submitted equipment list that there is a high temperature
dishwasher (Avenger HT-3) in the kitchen. High temp dishwasher wastewater
is not permitted to enter any HGI so this item must be removed from the
grease drain.
b.To prevent over loading, an HGI can only receive total drainage flows from
maximum of 4 fixtures. Fixtures that generate fat, oils, and grease are to be
directed to the HGI and are listed below;
three compartment sink (follow Health Departments requirements, if
any, for isolating the sanitize sink)
both 37” expresso machines
c.Corrected kitchen plans showing sanitary drain and grease drain incorporating
these changes need to be resubmitted.
2.I have reviewed the proposed HGI. In light of the changes from a gravity grease
interceptor to a HGI, will the proposed HGI be placed inside the building or outside?
