The subject application has been reviewed but cannot be completed until the following items have been addressed/completed.
The kitchen plans indicate that all wastewater from the bathrooms and sinks in the kitchen are directed to the sanitary drain.
Dairy products and/or fats, oils, grease will be in the wastewater from sinks in the kitchen/product prep area. For this reason, wastewater from sinks in the kitchen area are required
to enter the grease drain excluding hand wash sinks.
Continue to direct the drains from hand wash sinks and bathrooms to the sanitary drains.
I will make the necessary comments on the plans and in the permit.
There will be a pretreatment plumbing rough in inspection for this facility.
